Eastern Oyster

The "Eastern length" of the Eastern Oyster reaches up to 8 inches. The pale white to gray shell is rough with ridges or bumps. Eastern oysters are one of few eaten entirely raw, but they are more than just a popular seafood. Their oyster shells are used in calcium supplements and in industrial processes.

Eastern oysters are found throughout the Gulf states - Texas, Louisiana, Mississippi, Alabama and Florida. Peak season spans a good part of the year, typically from September through April.
